Sugar Free No Flour Apple Pie Crepes

Super Delicious Apple Pie Crepes! They are gluten, grain and sugar free! So good, they were gone in 5 minutes;)Also very easy and quick to make.

Ingredients:

  • Crepes:
  • – 1egg
  • – 1.5 oz cream cheese ( i use full fat, softened)
  • – pinch of good tasting amazon stevia powder
  • – .5 tsp cinnamon ( or more if you like)
  • – .5 tsp butter for frying
  • Apple Filling:
  • – 1 medium apple ( I used unpeeled)
  • – 2tbsp Unsweetened Applesauce
  • – 1tsp corn starch
  • – 1tsp cinnamon
  • – .25 tsp good tasting amazon stevia powder
  • – .5 tsp vanilla extract
  • – 1 tbsp water
  • – zip lock bag
  • Ricotta Topping:
  • – 2 heaping tbsp whole milk ricotta cheese
  • – 2tbsp half and half
  • – .25 tsp vanilla extract
  • – .25 tsp good tasting amazon stevia powder

Instructions:

  1. Beat the cream cheese with cinnamon and Stevia.
  2. Add an egg and continue beating until no lumps remain.
  3. 3.Heat the butter on a medium skillet.
  4. Turn heat to medium – low and spoon about 3 tbsp of the batter and swirl around the pan.
  5. Fry for 4 minutes until set on top, then flip for another 2-3 minutes.
  6. Slice the apples ( thick or thin)
  7. Place the apples in a zip lock bag and add applesauce, corn starch, cinnamon, stevia, vanilla extract, and water.
  8. Close the bag and toss to mix.
  9. Open the bag just a tiny bit for a vent and place in a microwave for about 4 minutes. ( Adjust time depending on your apple slice thickness).
  10. Place all ingredients in a blender and blend until smooth.
  11. Put half the apple filling on half of the crepe and fold to close. Drizzle the ricotta topping on top. Enjoy!
  12. Serving Size: Makes 2 servings ( 1 crepe each)

Coconut Dairy-Free Buttercream Frosting recipes

This dairy-free, low-sugar coconut buttercream frosting is perfect for icing your favorite Paleo treats!

Ingredients:

  • 2 cups coconut cream, room temperature
  • 1/2 cup tapioca starch
  • 1 T amazon stevia powder
  • Pinch of vanilla bean powder

Instructions:

  1. For the cream, scoop out the thick coconut cream found at the top of the can. Save leftover liquid to use in smoothie recipes.
  2. In a large mixing bowl, combine scooped coconut cream, vanilla bean powder and stevia. Use a hand mixer to beat on medium speed until combined.
  3. Gradually add tapioca starch until desired thickness is reached. Continue to mix until smooth. Pour frosting into an airtight jar or bowl and refrigerate until ready to use.

Boosty Matcha Latte recipes – high fiber

Ingredients:

  • 1 tbsp matcha powder
  • 3 cups filtered water
  • 2 tbsp + 1 tsp honey
  • ½ cup + 1 tbsp hemp hearts
  • 1 tsp vanilla extract
  • 1 can coconut milk (full fat)

Instructions:

  1. Add water and hemp hearts into a blender and blend until hemp hearts are completely broken down. Strain the mixture through a fine mesh reserving the milk and discarding the hemp hearts.
  2. Add matcha powder into a small cup and dissolve it in a few tablespoons of hemp milk.
  3. Add vanilla extract and combine dissolved matcha with the rest of the hemp milk.
  4. Heat the mixture in a pot until simmering (do not boil).
  5. Let slightly cool and mix in honey with one tablespoon of hemp hearts (for the crunch) until dissolved and pour it carefully into the serving cups dividing equally.
  6. *** For chilled latte, mix in crushed ice into the mixture***
  7. Reserve a few tablespoons of coconut cream and whisk the remaining coconut milk.
  8. Carefully pour the coconut milk on top of the matcha mixture dividing equally between the cups.
  9. Whip up reserved coconut cream with honey and scoop on top of the matcha latte.
  10. Sprinkle with some hemp hearts and matcha powder.

Minty Matcha Juice recipes – high fiber

May is one of my favorite months. Its warmer, sunny weather finally stays around and I get to spend Mother’s Day hiking and playing at our family’s secret beach getaway spot in Gloucester. We pack a cooler full of snacks, drinks and lunch… of course there’s no shortage of fresh juice in that cooler! Here’s a refreshing twist on a simple, slightly sweet summery juice.  For a pick-me-up, matcha is a great addition to your juice. Matcha is a type of green tea, containing caffeine, and is rich in energizing nutrients like B vitamins; pairing matcha into your juice with pineapple boosts up those B vitamins big time! Matcha and this juice are also rich in antioxidant vitamins like A, C and E plus bone building vitamin K and a wealth of other wellness promoting phytonutrients.  Matcha also boasts EGCG, a catechin being studied for its benefits related to cancer prevention. Read labels carefully and look for pure matcha powder.  Many are mixed with sugar so buyer beware. Make your juice first using the veggies and fruits listed here, then stir in matcha powder, slowly.  If transporting, carry in a sealable jar or container then shake well before drinking.  Enjoy!      

Ingredients:

  • 1/4 pineapple
  • 6 sprigs of mint (stems and leaves)
  • 1 green apple
  • 1 cup (100 g) spinach
  • 4 celery stalks
  • 1 inch (2.5 cm) piece of ginger
  • 1 tsp matcha powder

Instructions:

  1. Wash produce well.
  2. Remove rind from pineapple.
  3. Wrap mint around celery.
  4. Juice all ingredients.
  5. Stir matcha powder into glass.
  6. Enjoy!

Raw Matcha Brownies – high fiber

A delicious mouthwatering healthy dessert!

Ingredients:

  • 1 tbsp Milled Flaxseed
  • 1-2 tbsp Matcha Powder
  • 50 g Rice Syrup
  • 100 g Coconut Oil
  • 20 g Rice Syrup or Honey
  • 1 tsp Vanilla Essence
  • 50 g Cacao Powder
  • 90 g Pitted Dates
  • 120 g Almond Butter
  • 125 g Walnuts & Almonds

Instructions:

  1. Process nuts in food processor until it becomes very fine.
  2. Add in your dates until it is well combined with the nuts.
  3. Pour your nut-date mixture in a medium bowl and mix in Cacao powder, Vanilla Extract and Rice Syrup until well combined. It should become a soft doughy texture.
  4. Scoop the brownie mix into a 8×8 baking dish lined with parchment paper and press the chocolate mix into the dish using your fingers or spoon.
  5. For the matcha layer, mix all the ingredients in a bowl until it is evenly combined.
  6. Spread the matcha mix over the brownie base and let it set in the fridge for at least an hour. You can also sprinkle more matcha powder over the brownies for a more intense taste.
  7. Once it has been set, take it out from the fridge and slice them equally into 12 squares with a sharp knife.

Hazelnut Chocolate Matcha Cocktail – high fiber

Ingredients:

  • * 2oz vodka
  • * 1oz white creme de cocoa
  • * 1/2 oz hazelnut liqueur
  • * 1/4 tsp matcha powder
  • * 1/2 oz vanilla simple syrup

Instructions:

  1. Make your vanilla simple syrup.
  2. Let that cool.
  3. Add the vodka, white crème de cacao, hazelnut liqueur, matcha powder and egg white to your shaker with ice.
  4. Shake it.
  5. A bunch.
  6. There's an egg white to emulsify and froth in there.
  7. It's for creamy, rich, goodness.
  8. When you get tired, double strain into your coupe.
  9. Let it settle.
  10. The cream will rise.
  11. Garnish with a dusting of matcha.
  12. Now go enjoy your grown up matcha blendy milkshake cocktail.
