Matcha Macadamia Nut Butter recipes – high fiber

Ingredients:

  • 2 cups macadamia nuts
  • ¼ cup coconut oil
  • 1 tsp matcha
  • 1 tbsp maple syrup (or to taste)

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Spread raw macadamia nuts onto a cookie sheet and roast in the oven for 10 minutes.
  3. After the nuts cool, process in food processor until finely ground.
  4. Add matcha, coconut oil, and maple syrup to the food processor and process until smooth. You may need to scrape down the sides every few minutes. If the mixture looks dry, keep processing, it will eventually turn creamy.
  5. Refrigerate until the matcha macadamia nut butter thickens to desired consistency.

Matcha Chocolate Chip Ice Cream (Dairy-Free, Low Carb) – high fiber

Last week I made this no-churn matcha chocolate chip ice cream that came out just perfect. Super creamy and delicious–that is if you’re a matcha-lover like me. The key ingredients that make this ice cream extra special are coconut cream and avocado. If you can’t find coconut cream, coconut milk works as well. Just be sure to leave it in the fridge overnight, do not shake it, and only use the solid cream on top. You can save the coconut water at the bottom of the can in a jar to later use in smoothies or chia puddings.

Ingredients:

  • 1 14-ounce can, coconut cream
  • 4 teaspoons matcha or Further Food Mindful Matcha Powder
  • 1/2 medium avocado
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla
  • 1/4 cup raw cacao nibs or dark chocolate chips

Instructions:

  1. Add all ingredients except for chocolate chips to a blender or food processor and blend until smooth
  2. Pour into a  6″x 6″ freezer-safe pan, add the raw cacao nibs or chocolate chips, cover, and freeze overnight until it’s fully frozen
  3. When ready to serve, let the ice cream thaw for 20-30 minutes, scoop into a bowl or waffle cone, and enjoy!

Raw Matcha Brownies – high fiber

A delicious mouthwatering healthy dessert!

Ingredients:

  • 1 tbsp Milled Flaxseed
  • 1-2 tbsp Matcha Powder
  • 50 g Rice Syrup
  • 100 g Coconut Oil
  • 20 g Rice Syrup or Honey
  • 1 tsp Vanilla Essence
  • 50 g Cacao Powder
  • 90 g Pitted Dates
  • 120 g Almond Butter
  • 125 g Walnuts & Almonds

Instructions:

  1. Process nuts in food processor until it becomes very fine.
  2. Add in your dates until it is well combined with the nuts.
  3. Pour your nut-date mixture in a medium bowl and mix in Cacao powder, Vanilla Extract and Rice Syrup until well combined. It should become a soft doughy texture.
  4. Scoop the brownie mix into a 8×8 baking dish lined with parchment paper and press the chocolate mix into the dish using your fingers or spoon.
  5. For the matcha layer, mix all the ingredients in a bowl until it is evenly combined.
  6. Spread the matcha mix over the brownie base and let it set in the fridge for at least an hour. You can also sprinkle more matcha powder over the brownies for a more intense taste.
  7. Once it has been set, take it out from the fridge and slice them equally into 12 squares with a sharp knife.

Boosty Matcha Latte recipes – high fiber

Ingredients:

  • 1 tbsp matcha powder
  • 3 cups filtered water
  • 2 tbsp + 1 tsp honey
  • ½ cup + 1 tbsp hemp hearts
  • 1 tsp vanilla extract
  • 1 can coconut milk (full fat)

Instructions:

  1. Add water and hemp hearts into a blender and blend until hemp hearts are completely broken down. Strain the mixture through a fine mesh reserving the milk and discarding the hemp hearts.
  2. Add matcha powder into a small cup and dissolve it in a few tablespoons of hemp milk.
  3. Add vanilla extract and combine dissolved matcha with the rest of the hemp milk.
  4. Heat the mixture in a pot until simmering (do not boil).
  5. Let slightly cool and mix in honey with one tablespoon of hemp hearts (for the crunch) until dissolved and pour it carefully into the serving cups dividing equally.
  6. *** For chilled latte, mix in crushed ice into the mixture***
  7. Reserve a few tablespoons of coconut cream and whisk the remaining coconut milk.
  8. Carefully pour the coconut milk on top of the matcha mixture dividing equally between the cups.
  9. Whip up reserved coconut cream with honey and scoop on top of the matcha latte.
  10. Sprinkle with some hemp hearts and matcha powder.
