Coffee Cream Eclairs

Okay. So it might look like a bit of a long recipe but it’s quite simple. It’s my go-to recipe when unexpected guests pop in because it’s so quick. Since the pastry is savoury, you can use the pastry with savoury fillings or to make mini croutons for soups or fill the shells with savoury toppings. The ratio is also easy to make 3-4 eclairs with half the ingredients. For an even lower sugar version and If you don’t want to glaze these with chocolate, you can simply dust them with cacao powder and add extra sweetener to the cream.

Ingredients:

  • ½ cup water
  • 40g butter, chopped
  • ½ cup plain flour
  • 2 eggs
  • For the Coffee Cream Filling:
  • 1 cup fresh cream
  • 2 tbsp unrefined icing sugar (10 stevia drops or 2 tablespoons Natvia)
  • ¼ tsp vanilla powder or essence
  • 1 tsp finely ground coffee (I used Nespresso's new Fortissio Lungo blend)
  • For the chocolate glaze icing:
  • 3 tbsp milk
  • 40g 85% cocoa dark chocolate, chopped finely

Instructions:

  1. Preheat oven to 220C (425F, gas mark 7).
  2. In a small saucepan set over medium heat bring water and butter to a boil. Add flour and mix vigorously with a wooden spoon until the mixture comes away from the sides and forms a ball. This should only take a few seconds.Transfer dough to a mixing bowl and flatten to cool slightly. Add eggs and beat with an electric mixer or whisk until glossy and smooth (I use my Braun stick blender with a whisk attachment for single egg quantity like this).
  3. Using a 2cm round piping tip or a zip lock bag with a 1.5cm hole cut in it pipe dough into 4 inch long logs about 1 inch apart.
  4. Bake at 220C (425F, gas mark 7) for 8 minutes, 180C (350F, gas mark 4) for 10 minutes, plus 5 minutes standing with the oven off and door slightly ajar. Transfer to a cooling rack to cool completely before filling,
  5. For the glaze, place milk and chocolate in a small bowl and heat on medium high setting in the microwave for 20 seconds. Mix gently to melt and form a ganache.
  6. For the filling, beat cream with sugar (stevia or Natvia), vanilla and freshly ground coffee until firm peaks form. Store in the fridge until needed.
  7. Cut cooled eclairs in half horizontally. Fill each half with whipped cream, sandwich together and spread the top in chocolate icing. Place on a cool cookie tray and chill in the fridge for the icing to set. The eclairs should keep in the fridge for 2-3 days un-iced, or a day when iced.

Sugar Free No Flour Apple Pie Crepes

Super Delicious Apple Pie Crepes! They are gluten, grain and sugar free! So good, they were gone in 5 minutes;)Also very easy and quick to make.

Ingredients:

  • Crepes:
  • – 1egg
  • – 1.5 oz cream cheese ( i use full fat, softened)
  • – pinch of good tasting amazon stevia powder
  • – .5 tsp cinnamon ( or more if you like)
  • – .5 tsp butter for frying
  • Apple Filling:
  • – 1 medium apple ( I used unpeeled)
  • – 2tbsp Unsweetened Applesauce
  • – 1tsp corn starch
  • – 1tsp cinnamon
  • – .25 tsp good tasting amazon stevia powder
  • – .5 tsp vanilla extract
  • – 1 tbsp water
  • – zip lock bag
  • Ricotta Topping:
  • – 2 heaping tbsp whole milk ricotta cheese
  • – 2tbsp half and half
  • – .25 tsp vanilla extract
  • – .25 tsp good tasting amazon stevia powder

Instructions:

  1. Beat the cream cheese with cinnamon and Stevia.
  2. Add an egg and continue beating until no lumps remain.
  3. 3.Heat the butter on a medium skillet.
  4. Turn heat to medium – low and spoon about 3 tbsp of the batter and swirl around the pan.
  5. Fry for 4 minutes until set on top, then flip for another 2-3 minutes.
  6. Slice the apples ( thick or thin)
  7. Place the apples in a zip lock bag and add applesauce, corn starch, cinnamon, stevia, vanilla extract, and water.
  8. Close the bag and toss to mix.
  9. Open the bag just a tiny bit for a vent and place in a microwave for about 4 minutes. ( Adjust time depending on your apple slice thickness).
  10. Place all ingredients in a blender and blend until smooth.
  11. Put half the apple filling on half of the crepe and fold to close. Drizzle the ricotta topping on top. Enjoy!
  12. Serving Size: Makes 2 servings ( 1 crepe each)

Low Fat Stevia Banana Bread

Ingredients:

  • 2 eggs
  • 2 bananas, over ripe
  • 1⁄3 cup skim milk
  • 2⁄3 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 1⁄4 cups whole wheat flour
  • 1⁄4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon amazon stevia powder
  • 1 1⁄2 teaspoons cinnamon
  • walnuts (optional)

Instructions:

  1. Preheat oven to 350 and prepare a 9×5 loaf pan.
  2. Beat eggs by hand. Then add in the applesauce, vanilla, milk and bananas.
  3. In a seperate bowl combine dry ingredients – flour, stevia, baking soda, cinnamon and salt.
  4. Add scoops of the dry ingredients into the egg mixture, mixing after each scoop until all combined.
  5. Pour into loaf pan and bake 45 minutes to an hour.
