Chocolate Macadamia Nut Butter Spread

If you prefer your nut butter sweeter, you could add some stevia drops to the blend for a sugar-free treat.

Ingredients:

  • 1½ cups raw unsalted macadamia nuts (about 225g or ½lb)
  • 1-2 tsp raw cacao powder
  • Optional: a few stevia drops, to taste

Instructions:

  1. Place macadamia nuts in a blender or food processor. Process on medium-high speed for 3-5 minutes until the oil in the nuts is released and they begin to form a smooth butter. Continue to process until your desired consistency is reached.
  2. Add cacao powder, and Stevia drops if using, and mix in.
  3. Store Chocolate Macadamia Nut Butter Spread in an airtight container or jar in the fridge for upto 2 weeks.

Simple Morning Oatmeal

A dairy-free and deliciously simple breakfast.

Ingredients:

  • 2 cups uncooked oats
  • ¾ cup slivered almonds
  • 2 tbsp. stevia
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • ½ tsp. sea salt
  • 1¾ cups rice milk
  • 1 large egg
  • 3 tbsp. butter, melted
  • 2 tsp. almond extract
  • 1 cup fresh blueberries
  • 2 cups fresh strawberries, sliced
  • 2 tbsp. honey, for serving

Instructions:

  1. Preheat oven to 375 degrees F. Prepare an 8-inch square baking dish with nonstick baking spray.
  2. Combine oats, almonds, sugar, baking powder, cinnamon, and sea salt in a bowl. In a separate bowl, whisk rice milk, egg, butter, and almond extract.
  3. Transfer oat mixture to prepared baking dish; layer the almond milk mixture on top of oats. Scatter blueberries and strawberries on top.
  4. Bake for 45 minutes or until golden brown and the oat mixture has set. Remove from oven; set aside to cool for 5 minutes before serving with a drizzle of honey.

Creamy Not-Ella Carob Butter recipes

A creamy, dreamy, luscious, migraine-friendly treat that is pretty darn close to Nutella, suitable for spreading on apple slices or gluten-free toast when you want a sweet snack.

Ingredients:

  • 1 cup (230 g) raw, unsalted sunflower seeds
  • 1 cup (160 g) raw hemp seeds
  • 4 packets stevia, or 40 drops liquid stevia
  • 1/2 cup (48 g) carob powder
  • 4 tablespoons (60 ml) coconut oil

Instructions:

  1. Preheat oven to 300F/150C/gas mark 2. Put sunflower seeds on baking sheets lined with fresh parchment paper.
  2. Toast seeds for 10 minutes, then stir. Turn off the oven and toast the seeds another 10 minutes. You want them golden brown but not dark brown or burned. Remove from oven and let cool on a wire rack.
  3. Put the seeds in a food processor fitted with the S-blade and blend into a fine powder, about a minute.
  4. Add hemp seeds and stevia and blend about 4 more minutes, stopping every minute to scrape down the sides. Eventually it will form a ball and become nut butter.
  5. In a separate bowl, stir together carob powder with the oil, then add to the processor. (If you add the carob powder and oil directly to the food processor, you will have a powdery carob explosion that is not fun to clean up.) Continue blending until you get the smooth consistency you want.
  6. Serve right away or scrape into a glass jar and store in the refrigerator. It will be spreadable when refrigerated, and just a little thicker than Nutella at room temperature. This lasts several weeks in the refrigerator (if you can stay out of it!).
  7. Makes 16 servings.

Sugar Free No Flour Apple Pie Crepes

Super Delicious Apple Pie Crepes! They are gluten, grain and sugar free! So good, they were gone in 5 minutes;)Also very easy and quick to make.

Ingredients:

  • Crepes:
  • – 1egg
  • – 1.5 oz cream cheese ( i use full fat, softened)
  • – pinch of good tasting amazon stevia powder
  • – .5 tsp cinnamon ( or more if you like)
  • – .5 tsp butter for frying
  • Apple Filling:
  • – 1 medium apple ( I used unpeeled)
  • – 2tbsp Unsweetened Applesauce
  • – 1tsp corn starch
  • – 1tsp cinnamon
  • – .25 tsp good tasting amazon stevia powder
  • – .5 tsp vanilla extract
  • – 1 tbsp water
  • – zip lock bag
  • Ricotta Topping:
  • – 2 heaping tbsp whole milk ricotta cheese
  • – 2tbsp half and half
  • – .25 tsp vanilla extract
  • – .25 tsp good tasting amazon stevia powder

Instructions:

  1. Beat the cream cheese with cinnamon and Stevia.
  2. Add an egg and continue beating until no lumps remain.
  3. 3.Heat the butter on a medium skillet.
  4. Turn heat to medium – low and spoon about 3 tbsp of the batter and swirl around the pan.
  5. Fry for 4 minutes until set on top, then flip for another 2-3 minutes.
  6. Slice the apples ( thick or thin)
  7. Place the apples in a zip lock bag and add applesauce, corn starch, cinnamon, stevia, vanilla extract, and water.
  8. Close the bag and toss to mix.
  9. Open the bag just a tiny bit for a vent and place in a microwave for about 4 minutes. ( Adjust time depending on your apple slice thickness).
  10. Place all ingredients in a blender and blend until smooth.
  11. Put half the apple filling on half of the crepe and fold to close. Drizzle the ricotta topping on top. Enjoy!
  12. Serving Size: Makes 2 servings ( 1 crepe each)
