Stevia Black Bean Brownies

Ingredients:

  • 1 1⁄2 cups canned black beans, drained and rinsed (about a 15oz can)
  • 2 medium bananas
  • 1⁄3 cup unsweetened applesauce
  • 1⁄4 cup unsweetened cocoa
  • 1⁄4 teaspoon amazon stevia powder
  • 1 teaspoon vanilla extract (or any flavor you want)
  • 1⁄4 cup oats (ground up in blender)

Instructions:

  1. Make sure beans are drained and rinsed, set aside.
  2. Slice the 2 bananas and set aside.
  3. Preheat oven to 350 degrees Fahrenheit.
  4. If using large flake or quick oats, grind in blender or food processor, then remove and set aside.
  5. Combine all ingredients, except oats, in blender or food processor and mix. Scape the sides as needed.
  6. Add oats and continue blending.
  7. Adjust consistency with more oats as needed. You can also add more flavoring or stevia if you wish.
  8. Grease a 8 x 8 inch pan.
  9. Pour mixture into pan and spread evenly until it is level.
  10. Bake for approximate 30 minutes or until toothpick comes out cleanly when inserted.
  11. Allow to cool for a few minutes and then cut into 12 equal squares.

Instructions:

  1. Preheat oven to 350 and prepare a 9×5 loaf pan.
  2. Beat eggs by hand. Then add in the applesauce, vanilla, milk and bananas.

  4. Add scoops of the dry ingredients into the egg mixture, mixing after each scoop until all combined.

Instructions:

  1. Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Serve with sugar free syrup (or any syrup of your choice) and fresh berries. A surprisingly satisfying substitute for the real thing. Tastes like skinny fried cheesecakes! Even if you aren’t watching your carbs these are a delicious departure from the traditional doughy stack of pancakes. And you won’t have the sleepy feeling that usually comes afterwards!

Better Than Whipped Cream

Ingredients:

  • 14 ounces coconut milk
  • 4 -5 teaspoons amazon stevia powder (equals 4-5 packets)
  • 1⁄2 teaspoon arrowroot

Instructions:

  1. Mix all of the ingredients in a large bowl. It is important to use a large bowl so that the milk is shallow in the bowl and your electric whisk will not be more than half way submerged. This allows enough air to be beaten into the mixture and thicken.
  2. Beat with electric whisk for 3 minutes. Rest for 30-60 seconds and whisk for 3 minutes more. Cover and place in the refrigerator to chill for at least 6 hours or over night. You could eat it sooner if you can’t wait but it won’t be that really nice thick cream it turns into. I found it stays thick longer than traditional dairy whipped cream.

Chocolate Chip Cookies (Using Stevia)

Ingredients:

  • 2 cups all-purpose flour
  • 3⁄4 teaspoon sea salt
  • 3⁄4 teaspoon baking powder
  • 1 egg
  • 1⁄2 teaspoon white amazon stevia powder
  • 1 teaspoon vanilla
  • 1 cup salted butter, softened
  • 1 1⁄4 cups chocolate chips

Instructions:

  1. Preaheat oven to 350 degrees F. Lightly grease a cookie sheet (or line with parchment paper) & set aside.
  2. In a medium mixing bowl sift together the flour, salt & baking powder.
  3. Place the egg, stevia & vanilla in a large mixing bowl & beat well with a wooden spoon or hand-held electric mixer. Slowly add the butter, continuing to beat until the mixture is smooth & creamy.
  4. Add the flour mixture to the butter mixture, 1/2 cup at a time, stirring well with a wooden spoon after each addition. Fold in the chocolate chips.
  5. Drop heaping teaspoons of batter onto the cookie sheet about 2-inches apart. Bake 20-25 minutes or until the cookies are golden brown.

  2. In a small mixing bowl beat the eggs. Stir in carrots, raisins, and add nuts.
  3. Gradually fold the flour mixture into the egg mixture until just moistened.
  4. Spoon batter into paper muffin cups or greased muffin tins. Bake at 375 degree F. for 20-25 minutes or until muffin tops spring back from touch.

  • 1⁄4 teaspoon salt
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 cup hot water
  • 1⁄2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon butterscotch extract
  • 1 cup chocolate chips

Instructions:

  1. In a mixing bowl thoroughly combine flour stevia, and salt. Set aside.
  2. Chop oats in a blender until flakes are about half size.
  3. Pour hot water over baking soda and oats in medium mixing bowl and beat to combine.
  4. Add oil, vanilla extract, and butterscotch flavoring.
  5. Add dry ingredients and stir well.
  6. Mix in chocolate chips and sesame seeds.
  7. Using 2 teaspoons of dough per cookie, roll into balls and place on lightly greased cookie sheets.
  8. Bake in a preheated oven at 325 degrees for 13 to 15 minute Cookies will be lightly browned on the bottom. Cool on racks and store in an airtight container.
